OK, we've been learning the laws concerning sifting on Shabbat. Sifting is one of the things you can't do.
Straining tea comes under the heading of sifting, so to avoid this (and also to avoid problems related to cooking), apparently people make something called "tea essence," which appears to be unpalatably strong over-stewed tea, and then they dilute it on Shabbat with hot water to make tea.
How disgusting does that sound? Better to go without tea at all.
