Made Random Potluck Bread on Friday to use up the last of the various flours. So it was something like, a cup of regular flour, three (or was it four?) cups of bread flour, perhaps a cup and a half of random semolina, the last egg, maybe a quarter cup of honey dregs (that's where it's gone all crystallised and nasty and you have to resurrect it with boiling water), and about the same amt of olive oil. Rose it for about three hours the first round because I was out shopping and stuff, about an hour the second time because I wanted to get it in the oven already.
And it was really nice. Soft, slightly dense, just the right degree of crumbliness, nice thin-but-chewy crust...yum. Hooray.
